
About the Recipe
This is a recipe I have perfected over the years and any time I see it in a video game, I must have my character make it! It is so delicious, and utterly decadent when you add coconut and cherries.

Ingredients
For the sponge:
300g golden caster sugar
300g butter
300g self-raising flour
4 medium eggs
1 tsp vanilla essence
50g desiccated coconut
For the topping:
1 tin pineapple rings
50g brown sugar
50g butter
(Optional) glace cherries
Preparation
Pre-heat your oven at 180C/170C fan/Gas mark 4.
Cream the butter and sugar together.
Slowly add the eggs one at a time until they are fully incorporated.
Add the vanilla essence.
Stir in the coconut.
Fold in the flour.
Grease an line a 10-in cake tin.
Sprinkle brown sugar on the bottom and dot pieces of butter.
Place pineapple rings on the sugar and butter, and add cherries if you want.
Place in a pre-heated oven and bake for 30 minutes or until golden brown and a skewer comes out clean when poked in the middle.
